The delicious tuna stew from the north

If you find fresh tuna at the fish market or supermarket fish counter, you should definitely try this dish.

Marmitako is a delicious tuna stew from northern Spain, the Basque Country. It is a typical speciality there.

But this dish is also well known and very popular in southern and central Spain.
Ingredients

750 g fresh tuna, cut into thick slices
1 kg potatoes
1 onion
1 green pepper
3 cloves of garlic
2 tomatoes
150 ml white wine
1 litre meat stock
1 teaspoon sweet paprika powder
1 bay leaf

The preparation


Step 1:

Peel the onion and garlic and dice them together with the bell pepper.

Step 2:

Next, pour the olive oil into a large pot and heat it up. Add the onion, garlic and bell pepper and sauté until the onion is translucent. Add a little salt. Reduce the heat to medium.

Step 3:

In the meantime, peel and dice the tomatoes, peel the potatoes and chop them into pieces with a knife. Then add the tomatoes and potatoes and fry briefly.

Step 4:

Add the wine, paprika powder and bay leaf and simmer for a few minutes. While the vegetables are cooking, heat the fish stock and add it to the pan.

Step 5:

Cook over a medium heat until the potatoes are almost done.

Step 6:

Then cut the tuna into large cubes and add to the pan. Simmer for approx. 10 minutes until the tuna is cooked through. Done!

Leave to stand for approx. 5 minutes and serve.
