Hearty smoked bean stew

Fabada Austuriana is a delicious smoked bean stew. As the name suggests, it comes from Asturias, a region in northern Spain on the Atlantic coast.

The climate in this region is cooler, with plenty of rain and lush vegetation. Asturias is a very beautiful region with many cultural buildings.

The main dish there is Fabada. However, it is also well known and popular in most regions of Spain.

It is an absolute treat, especially on cold days.
Ingredients

500 g white beans
1 onion
1 clove of garlic
200 g bacon in one piece
A few smoked paprika sausages (chorizo)
A few smoked black pudding sausages (morcilla)
2 tsp chopped fresh parsley
1/2 tsp sweet paprika powder
5 tbsp olive oil

Preparation: approx. 1.5 hours

The preparation


Step 1:

Soak the white beans in water for at least 12 hours. Then place them in a sieve, wash them and put them in a large saucepan.

Step 2:

Fill with water until the beans are well covered and bring to the boil.

Step 3:

In the meantime, peel and quarter the onion. Peel and crush the garlic. Prick the pepper and black pudding several times with a fork.

Step 4:

Then add all the ingredients to the beans.

Step 5:

When the water boils, reduce the heat to medium and simmer for about 1 hour (the cooking time depends on the beans). After about 15 minutes, season with salt to taste. Done!

Step 6:

Slice the peppers and black pudding before serving, dice the bacon, return it to the pot and stir.
