The preparation
Step 1:
Bring a pot of water and rice to the boil and cook for approx. 10 minutes. Pour the rice into a sieve, drain and leave to cool.
Step 2:
Pour the milk into a pot, add the lemon zest, cinnamon stick and sugar and bring to the boil briefly. Then leave the milk to cool slightly. Once cooled, remove the lemon zest and cinnamon.
Step 3:
Set half of the milk aside and add the other half to a saucepan with the rice. Bring everything to the boil, then reduce to a low heat and stir the rice continuously to prevent it from burning. When the milk has boiled away, add some of the milk you set aside and continue. Repeat until the rice is cooked and the milk has completely boiled away.
Step 4:
Spoon the finished rice pudding into small bowls and leave to cool. Then place in the fridge for approx. 1 hour. Garnish with fruit, e.g. strawberries. Done!
