The preparation
Step 1:
Peel the potatoes and cut them into long strips (like French fries).
Step 2:
Then pour plenty of olive or sunflower oil into a pan and heat it up.
Step 3:
When the oil is hot, add the potatoes and fry them.
Step 4:
In the meantime, slice the chorizo and fry it on both sides in a little oil in a small pan or saucepan.
Step 5:
When the potatoes are ready, remove them from the oil, place them on a plate lined with kitchen paper and season with salt.
Step 6:
Crack the eggs into a pan with a little oil and fry them like fried eggs.
Step 7:
Finally, place the potatoes on a large plate and spread the chorizo slices and the Serrano ham, cut into pieces, over the potatoes. Finally, place the eggs on top.
