Crispy potatoes with egg and Serrano ham

This very easy-to-prepare recipe is very popular throughout Spain. Huevos rotos (broken eggs) may be high in calories, but they are delicious.

There are also several variations in terms of ingredients. Today, we are making them with chorizo and Serrano ham. They can be enjoyed as a primer plato, i.e. as a starter or main course.
Ingredients

6 large potatoes
4 eggs
2 chorizo sausages
4 slices of Serrano ham
Olive oil or sunflower oil
Salt

The preparation


Step 1:

Peel the potatoes and cut them into long strips (like French fries).

Step 2:

Then pour plenty of olive or sunflower oil into a pan and heat it up.

Step 3:

When the oil is hot, add the potatoes and fry them.

Step 4:

In the meantime, slice the chorizo and fry it on both sides in a little oil in a small pan or saucepan.

Step 5:

When the potatoes are ready, remove them from the oil, place them on a plate lined with kitchen paper and season with salt.

Step 6:

Crack the eggs into a pan with a little oil and fry them like fried eggs.

Step 7:

Finally, place the potatoes on a large plate and spread the chorizo slices and the Serrano ham, cut into pieces, over the potatoes. Finally, place the eggs on top.
