Pisto Manchego

Pisto Manchego is a delicious dish made with peppers and courgettes that can be served hot or cold as a side dish, main course or tapa.

It can be prepared vegan, i.e. using only plant-based ingredients, or served as a main course with side dishes such as fried eggs, bread or sausage.

Pisto Manchego comes from the region of Castilla-La Mancha, the region of windmills. Farmers prepared the dish from harvested vegetables.

Pisto Manchego has a very fruity and fresh taste.
Ingredients

5 tablespoons olive oil
1 onion
1 clove of garlic
1 red pepper
1 green pepper
1 courgette
500 g tomatoes

Preparation time: approx. 40 minutes

The preparation


Step 1:

Peel and dice the onion, garlic, courgette and tomatoes. Dice the peppers.

Step 2:

Heat the oil in a large frying pan.

Step 3:

Add the vegetables and fry over a medium heat for approx. 10 minutes.

Step 4:

Then reduce the heat to low and simmer for 20–25 minutes.

Step 5:

Season with salt to taste. Done.

Step 6:

Can be served hot or cold with baguette, fried eggs and sausage.
