FIDEUA

The delicious pasta paella from Spain

The delicious pasta paella from Spain

Fideuá is a completely different type of paella. Instead of rice, it uses small, semi-circular noodles called fideuá.

Like paella Valenciana, it can be prepared with meat and vegetables, and like mixed paella, it can be prepared with meat, vegetables, and fish, or as a fish paella. Of course, there is also a version that uses only vegetables, which is a real treat for vegans and vegetarians.

No matter how you prepare it, it is always delicious.

Fideuá is widespread and popular in Spain. I will show you how to make fideuá with meat and vegetables.

The preparation

Step 1:

Pour the olive oil into a paella pan, sprinkle in a little salt and heat. When the oil is hot, add the garlic cloves with their skins on and reduce the heat to medium. Fry the garlic for 2-3 minutes.

Step 2:

Then add the chicken and fry. Do not fry the meat completely.

Step 3:

In the meantime, peel and slice the carrot. Dice the tomato as well.

Step 4:

Add the peas, carrot and tomato and fry for 3-4 minutes. Then sprinkle in the paprika powder, stir well and add the water.

Step 5:

Turn the heat back up to high and bring everything to the boil. When the water boils, reduce the heat to medium and simmer for about 25 minutes. Season with salt and add the rosemary and bay leaf.

Step 6:

Then add the fideuá noodles, stir well and simmer for another 15-20 minutes until the noodles are cooked through. Done!
