Delicious Andalusian-style cold vegetable soup

Gazpacho Andaluz

One of the best-known specialities in the Mediterranean region is gazpacho Andaluz. It is a vegetable soup that is served cold. It is a real treat, especially on hot summer days. Its fresh and fruity taste makes it so special and popular.

There are a number of cold soups in Spain, but gazpacho Andaluz is certainly the classic.

As the name suggests, it originates from Andalusia in southern Spain. There are several variations in how it is prepared.

Gazpacho Andaluz is also a treat for vegetarians and vegans, as it is made using only plant-based ingredients.
Ingredients

1 kg tomatoes
1 red pepper
1 cucumber
8 tbsp mild olive oil
1 clove of garlic
1/2 baguette
Vinegar
Salt

As a side dish:

Cucumbers
Red or green peppers
Onions
Carrots
Roasted bread cubes

Preparation time: approx. 20 minutes + 1 hour cooling time

The preparation


Step 1:

Slice the bread and soak it in lukewarm water for about 10 minutes.

Step 2:

Wash and peel the tomatoes, cucumber and garlic, then dice them. Wash the peppers and dice them.

Step 3:

Place the soaked bread in a sieve and squeeze out any excess water. Mix all the ingredients in a blender or with a hand blender until you have a nice creamy consistency.

Step 4:

Season to taste with salt and vinegar.

Step 5:

Place the gazpacho in the fridge for at least an hour.

Step 6:

Prepare the garnish. You can use vegetables such as green or red peppers, spring onions or regular onions, carrots and roasted bread cubes. Simply cut the vegetables into small cubes.

Step 7:

Remove the soup from the refrigerator, season again if necessary, pour into soup plates, garnish and serve cold.

Important for tomatoes

When making Gazpacho Andaluz, make sure you buy tomatoes that have flavour. It's better to spend a few extra pence and buy good quality tomatoes, e.g. from your trusted farmer. The delicious fruity flavour depends very much on the tomatoes.
